How to make 3-ingredient shortbread cookies:
Start by melting the butter—just pop it into a microwave-safe bowl and heat it for about 30 to 60 seconds until it’s fully melted. Once that’s done, mix the melted butter with sugar until the mixture becomes light and fluffy. Add the flour next and mix until the dough starts to come together, forming a soft texture.
Now, it’s time to form the dough. Lightly flour a flat surface and roll the dough into a ball. Wrap the ball in plastic wrap and refrigerate it for at least 1 hour—this will help the dough firm up and make it easier to cut.
After the dough has chilled, take it out and roll or flatten it to about 1/4″ to 1/2″ thick. Use cookie cutters to cut out your shapes—heart-shaped cutters are always fun, but feel free to get creative! Place your shaped dough on a cookie sheet, and then pop the sheet back into the fridge while you preheat the oven to 325°F (160°C).
