Using mayo to make amazingly moist and delicious cakes is an old and hopefully well known hack. I still remember being excited whenever I heard my aunt Vickie was visiting, because she’d likely be bringing us her family favorite chocolate mayonnaise cake (not going to lie I’m Pavlov’s dogging it now, salivating a bit here). I’ll share her from scratch recipe, along with some other family favorites, another time. Right now, time is short; and I found Pillsbury put out this quick and easy recipe for families in a hurry. Next, grab your mixing bowl and beat together a box of cake mix, mayonnaise (trust me on this!), water, and eggs on medium speed for two minutes until smooth and luscious. Pour the batter into the pan, pop it in the oven, and bake for 39-43 minutes, or until your kitchen smells like heaven.
Let the cake cool in the pan for about 10 minutes before turning it out onto a cooling rack to finish cooling completely.
